So, true to my blog name, here is my recipe for Canadian Granola (although it’s really the granola recipe from the Holden Village cookbook, so technically, it’s Holden Village Granola.)
16 c. Oatmeal (I use steel cut)
1/4 c. cinnamon
8 c. of any combination of other yummies (we really like almonds, flax, sesame seeds, unsweetened coconut, wheat germ, dried fruit…especially dates)
A word of warning, if you will add raisins, add them after cooking, as they burn in the oven.
Mix all of the above in a large container (I use my turkey roaster)
In a pot, heat 1 1/2 c. of honey and 1/2 c. of oil until melted.
Stir into oat mixture.
Spread thin on cookie sheets and bake @ 200C for 60-80 minutes, stirring occasionally.
Makes about 1 1/2 gallons, to be stored in airtight container after cooled.
